The Cooked Breakfast

A cooked breakfast will set you up for the day, it is a great foundation. It's up to you what you eat for breakfast, but many will agree that eggs, spinach and a cup of tea makes for a great breakfast. For some it will include coffee, for others it may include salmon on toast. Protein is a wise choice for this time of day.

The Cooked Breakfast: A Cooked Breakfast

This is one of my favorite breakfasts, especially on weekends. It will keep you satisfied for hours, making it perfect for days when you might not eat until later in the day. A hearty meal like this will keep you full and energized until lunchtime.

For variety, you can alternate with High Fibre Cereal, Muesli, or a Protein Smoothie on the other mornings.

And don’t skip the spinach! Use fresh, garden-picked spinach if possible. Spinach is best enjoyed as fresh as you can get it to retain its folic acid—an essential vitamin that’s often lacking in our diets. You can learn more about the importance of folic acid here

Ingredients

  • Free range eggs – 2
  • Free range bacon – 1 good slice
  • Black pudding (optional), peeled green apple – ½ Granny smith
  • Some fresh spinach (or 1 portion frozen spinach)
  • ½ large tomato
  • Small amount of salmon – fresh, smoked or baked
  • A few button mushrooms

Method: The Cooked Breakfast

  • Cook the eggs as you wish – scrambled, poached or lightly cooked are best.
  • Steam the spinach for a few minutes only. Frozen? it defrosts and cooks in mere minutes.
  • Fry the half tomato in olive oil, you can add two slices of red onion or zucchini too.
  • Fry the Black pudding sausage and the ½ peeled Granny smith apple in the same pan you fry the bacon :-), turning once only.
  • The salmon and mushrooms (cooked) are optional but a very tasty addition.
  • Serve with a slice of gluten free bread or have with a flat bread (wrap).
  • Enjoy with a herbal tea or a cup of green tea.
