Coconut Chia Pudding

This fancy breakfast recipe of Coconut Chia Pudding is simple and perfect for those with yeast infections. It’s not only delicious but also packed with nutrients that support gut health and overall wellness.

Coconut Chia Seed Pudding: a perfect breakfast for the candida dietChia Seeds: High in fiber and omega-3 fatty acids, chia seeds help maintain a healthy digestive system and provide anti-inflammatory benefits. The fiber content aids in promoting regular bowel movements and can help cleanse the digestive tract.

Coconut Milk: Provides healthy fats and is low in carbs. Coconut milk contains medium-chain triglycerides (MCTs) that are easily digestible and can provide a quick source of energy. These fats also help to keep you satiated longer, making it a great choice for breakfast.

Stevia or Monk Fruit: Natural sweeteners that do not feed candida. Both stevia and monk fruit are excellent alternatives to sugar, providing sweetness without the adverse effects on blood sugar levels.

Ingredients

– 1/4 cup chia seeds
– 1 cup unsweetened coconut milk
– 1 teaspoon vanilla extract
– 1 tablespoon stevia or monk fruit sweetener
– Optional: Fresh berries or nuts for topping
– Optional: pinch of sea salt or cinnamon

 Instructions

1. Mix Ingredients: In a bowl, combine chia seeds, coconut milk, vanilla extract, and sweetener. Stir well to ensure the chia seeds are evenly distributed and not clumping together.

2. Refrigerate: Cover and refrigerate for at least 4 hours or overnight. Stir the mixture occasionally to prevent the seeds from clumping and to ensure a consistent texture. The chia seeds will absorb the liquid and expand, creating a pudding-like consistency.

3. Serve: Before serving, give the coconut chia pudding a good stir to break up any clumps. Top with fresh berries or nuts if desired for added flavor and texture. A pinch of sea salt or cinnamon can enhance the taste and add a bit of complexity to the dish.

This Coconut Chia Pudding is not only easy to prepare but also incredibly versatile. You can customize it with different toppings like sliced almonds, shredded coconut, or even a drizzle of almond butter for added protein. It’s a great way to start your day with a nutrient-dense meal that supports your body’s natural defenses against yeast infections.
