Red Cabbage and Feta Salad is more than just a colorful addition to your summer table—it’s a feast for both the eyes and the taste buds. The deep purple hue of the red cabbage contrasts beautifully with the creamy white feta, creating an eye-catching dish that draws people in. Beyond its visual appeal, this salad offers a delightful crunch and a tangy, savory flavor that complements a variety of main courses.

Red cabbage is a nutritional powerhouse, rich in vitamins C and K, as well as antioxidants and fiber. These nutrients support a healthy immune system, promote strong bones, and aid digestion. The slight peppery taste of red cabbage pairs perfectly with the salty, creamy feta cheese, creating a harmonious blend of flavors and textures.

Preparing this salad is simple and quick, making it an ideal choice for busy summer days. Thinly slice the red cabbage to ensure a tender crunch, and combine it with crumbled feta. You can enhance the flavor profile by adding other ingredients like thinly sliced red onions, shredded carrots, and a handful of fresh herbs such as parsley or mint. For a bit of sweetness, consider tossing in some dried cranberries or apple slices.

Ingredients

  • ½ Large Red Cabbage
  • 150g Feta Cheese
  • 1 Apple, diced (optional)
  • 2 Tablespoons Sunflower Seeds
  • 4 Tablespoons Tangy Vinaigrette

Method

Shred the cabbage very finely and mix with the crumbled cheese, chopped apple and sunflower seeds.

Dress the salad with a light vinaigrette made from olive oil, lemon juice, and a touch of honey or balsamic vinegar. This dressing not only brings the ingredients together but also enhances the natural flavors of the cabbage and feta. The acidity of the lemon juice or vinegar balances the richness of the feta, while the honey adds a subtle sweetness that rounds out the dish.

Toss well gently in the vinaigrette. See our vinaigrette recipe below
