Kids love snacks, and so do adults. I don’t mind if my kids have a snack – as long as it is healthy. Here’s a quick, easy and healthy snack. Use puffed brown rice of millet, obtainable from the health-food shop. You and your children will enjoy making and eating this one.

Healthy Puffed Rice or Millet Snack Bars: A Kid-Friendly and Grown-Up Approved Treat

– 1/3 cup of brown rice syrup (a natural sweetener that binds the bars together)

Directions

 

1. Prepare the Syrup:
– In a small saucepan, combine the almond butter, vanilla extract, and brown rice syrup.
– Heat the mixture over low heat, stirring constantly until it becomes smooth and syrupy. This only takes a few minutes, so keep a close eye on it to avoid burning.

2. Mix with Cereal:
– Pour the syrupy mixture over the puffed brown rice or millet cereal in a large mixing bowl.
– Stir well to ensure that the cereal is evenly coated with the syrup. The mixture should be sticky and well-combined.

3. Set the Bars:
– Lightly grease a glass Pyrex baking dish with butter or rice bran oil to prevent sticking.
– Transfer the coated cereal mixture into the dish, pressing it down firmly to create an even layer.
– Let the mixture cool at room temperature until it sets. For quicker results, you can place the dish in the fridge for about an hour.

4. Serve:
– Once the bars have cooled and set, cut them into squares or rectangles.
