It is incredible how many patients we see, and how many health-care practitioners that I speak with who avoid peanut butter, stating that is is "too allergy forming" and an unhealthy food. This is not true. For those with peanut allergies, yes - please avoid peanut butter. But for those without a food allergy there is not really an issue with peanut butter, and in fact peanut butter when freshly made from freshly roasted peanuts is a real tasty treat indeed.

Do You Like Fresh Peanut Butter?

It is incredible how many patients we see, and how many health-care practitioners that I speak with who avoid peanut butter, stating that is is “too allergy forming” and an unhealthy food. This is not true. For those with peanut allergies, yes – please avoid peanut butter. But for those without a food allergy there is not really an issue with peanut butter, and in fact peanut butter when freshly made from freshly roasted peanuts is a real tasty treat indeed.

There is no doubt, some of the cheap commercial brands are not the best, and you can taste the rancid peanuts frequently with many different supermarket brands, so it is best to make your own. Besides, you wouldn’t have a clue if you are buying GE on Non-GE peanuts, and that can be a worry. Buy a kilo from your health food shop – and insist on organically grown. The best peanuts I ever tasted, were ones which were freshly harvested and roasted, they came from a place called Kingaroy in Queensland, Australia – the peanut capital of Australia. You simply haven’t tasted peanuts until you have tasted really freshly roasted ones.

It is so easy to make creamy fresh peanut butter with a Vita Mix, and once you make up a fresh batch, you will never want that shop bought stuff ever again. But you do have a Vita Mix, don’t you?

Vita Mix Peanut Butter Recipe

Speed: Variable to High
Time: 1 minute (see caution*)

Ingredients

3 cups (440 g) unsalted roasted peanuts

Method

1. Pour nuts into the Vita Mix container and secure lid.
2. Select Variable 1 speed.
3. Turn machine on and quickly increase speed to Variable 10, then High, using the tamper to push the ingredients into the blades.
4. In 1 minute you will hear a high pitched chugging sound. Once the butter begins to flow freely through the blades the motor sound will change from a high pitch to a low labouring sound. Stop machine.
5. Store in an airtight container. It can also be frozen for longer storage.

Variation: Cashew Butter

Substitute dry roasted cashews. If using dry roasted nuts, you may need to add oil. Begin with 3 tablespoons and add more if necessary.

Variation: Almond Butter

Substitute dry roasted whole almonds. Add 1/2 cup (120 ml) of light-flavoured oil during the blending process. Refrigerate and pour off excess oil the next day.
