Green Beans and Mushroom Stir Fry

Perfect for any meal, this favorite recipe: Green Bean and Mushroom Stir Fry is a delicious and nutritious dish.

Green beans are a nutritious powerhouse, rich in iron, magnesium, and many other essential minerals. They’re a delightful summer treat and taste best when cooked briefly or steamed.

Avoid using frozen beans—fresh is always best!

And remember, there’s no need to tail the beans; simply trim a millimeter off the stalk end.

Ingredients

  • 2 teaspoons olive oil
  • 4 cloves of garlic, crushed, peeled and finely sliced
  • 1 large red capsicum (bell pepper)
  • 250 grams mushrooms
  • 200 grams green beans (fresh)
  • 3 teaspoons roasted sesame seeds
  • 1 Tablespoon soy sauce

Method:

  • Top and don’t tail the beans, cut in half diagonally
  • Heat oil in a wok.
  • Add the garlic
  • Add the vegetables
  • Add the sesame seeds
  • Add the soy sauce
  • Stir constantly over heat for about 2 minutes until vegetables are all tender but still crunchy.
  • Serve at once with steamed jasmine rice.
