Millet and Chickpea Patties: A Protein-Packed, Gluten-Free Delight

If you’re on the lookout for a nutritious and delicious meatless meal, these Millet and Chickpea Patties are perfect for you! Ingredients:

– 1 medium onion, finely chopped
– 1 can of chickpeas, drained and rinsed (or 1 cup of freshly cooked chickpeas)
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– ¼ teaspoon chili powder (adjust to taste or omit if preferred)
– ½ teaspoon Celtic sea salt
– Ground black pepper, to taste
– ½ cup ground millet
– 1 egg, beaten
– Olive oil for cooking

Method:

1. Prepare the Mixture:  – Place the onion, chickpeas, ground cumin, ground coriander, chili powder, Celtic sea salt, ground black pepper, and ground millet into a food processor.
– Process the mixture until it forms a coarse paste. If you don’t have a food processor, finely chop the onion, mash the chickpeas with a fork, and mix all the ingredients thoroughly in a bowl.

2.   Form the Patties:
– Shape the mixture into 5-6 patties. If the mixture is too soft, add a bit more ground millet.
– Lightly coat the outside of each patty with additional ground millet for a crispy texture.

3.   Chill and Cook:
– Place the patties in the refrigerator for about 30 minutes to firm up.
– Heat a little olive oil in a frying pan over medium heat. Cook the patties until golden brown on both sides, about 4-5 minutes per side.

4.   Serve:
– These Millet and Chickpea Patties are delicious served with a refreshing yogurt and cucumber dressing. They’re equally enjoyable on their own or paired with a crisp salad.
