Feijoa is a fruit that pairs nicely with a wide variety of different dishes; when combined with ginger, it creates a really divine combination. They also go well with pork, but their true calling is in desserts like cakes, crumbles, puddings, pies and other sweets. To bring out their full potential, combine them with ingredients like apples, dark chocolate, coconut, and lime zest. Experiment with this pie, try adding a little ginger.

Enjoy the Flavours of Autumn with This Feijoa Pie

Autumn is one of my favorite times of the year, especially when it comes to cooking. The crisp air and the abundance of fresh, seasonal produce like feijoas make it a great time to get creative in the kitchen. If you’re looking for a simple yet delicious dessert that embodies the essence of the season, this Feijoa Pie is the perfect choice.

Ingredients:

– 600g feijoa flesh
– 1/2 cup ground almonds
– 1 tablespoon melted butter
– 1/2 cup brown sugar
– Sweet shortcrust pastry

Method:

1. Prepare the Pastry: Start by lining a greased baking dish with sweet shortcrust pastry. Make sure to leave about 6 cm of pastry overhanging the edges. This extra pastry will be folded over later to give the pie a rustic, homemade look.

2. Mix the Filling: In a bowl, combine the feijoa flesh, ground almonds, melted butter, and brown sugar. This mixture will create a lovely, rich filling that’s packed with the unique flavor of feijoas. The ground almonds add a nice texture and help bind everything together.

3. Assemble the Pie: Spoon the filling evenly over the pastry base. Fold the overhanging pastry over the top of the filling, crimping the edges as you go. This not only looks great but also helps to keep the filling neatly in place.

4. Add the Final Touch: For an extra bit of crunch and flavor, sprinkle some slivered almonds over the exposed center of the pie. The almonds will toast nicely in the oven, adding a nutty contrast to the sweet feijoa filling.

5. Bake: Preheat your oven to 200°C and bake the pie for 25-30 minutes. You’ll know it’s ready when the pastry is golden brown and the filling is bubbling away.

Serve this Feijoa Pie warm, straight out of the oven. It’s a comforting, satisfying dessert that pairs beautifully with a scoop of vanilla ice cream or a dollop of fresh cream.
