Feijoa Cupcakes

Feijoas make beautifully moist cakes and loaves.  Try these cupcakes, they are so good for children's party treats. You will find that at different times of the year, certain fruits will be more readily available. This is excellent opportunity to use up some of this surplus fruit to make cupcakes.

Feijoas make beautifully moist cakes and loaves.  Try these cupcakes, they are so good for children’s party treats. You will find that at different times of the year, certain fruits will be more readily available. This is excellent opportunity to use up some of this surplus fruit to make cupcakes.

Ingredients:

  • 100 gram butter, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 3/4 cup mashed feijoa flesh
  • 1 teaspoon baking soda
  • 2 tablespoons hot milk
  • 1 1/2 cups flour
  • 2 teaspoons baking powder

Method

  • Preheat oven to 180 Celsius.
  • Cream butter and sugar.
  • Add vanilla, eggs and feijoa flesh.
  • Stir baking soda into hot milk and add to cake batter
  • Fold in dry ingredients – don’t over-mix
  • Spoon into patty cases (place in muffin tins to hold their shape)
  • Bake for 15 – 20 minutes.
  • When cool, ice with lemon icing and decorate.
