Broad Beans Recipe: High-Protein Red Meat Salad with Spinach

If you’re someone who typically avoids red meat and opts for chicken or fish, it might be time to reconsider. Red meat can be a versatile and delicious addition to your meals, especially when used in this broad beans recipe.

Broad beans, also known as fava beans, are packed with protein, fiber, and essential vitamins. This recipe is perfect for a healthy lunch or a satisfying dinner. Let’s dive in!

Ingredients

  • 1 onion, chopped
  • 3 tablespoons oil
  • 2 garlic cloves, crushed or finely sliced
  • 500g cubed beef (18 oz)
  • 1 lime
  • 1kg broad beans (2 ¼ lb)
  • ½ avocado, peeled and cubed
  • 500g spinach (18 oz)
  • Sea salt and ground black pepper to taste

Method

1. Preheat the Oven
Preheat your oven to 200°C (400°F or Gas mark 6).

2. Cook the Onion
In a large skillet, heat the oil over medium heat. Add the chopped onion and fry until golden brown.

3. Add Garlic and Beef
Add the crushed garlic and cubed beef to the skillet. Cook, turning occasionally, until the beef is browned on all sides.

4. Add Lime and Simmer
Slice the lime and add it to the skillet. Cover the beef with water and bring to a simmer. Cover and cook for 45 minutes, adding more water if necessary to keep the beef covered.

5. Prepare the Broad Beans
While the beef is cooking, remove the broad beans from their pods. After the beef has simmered for 45 minutes, add the broad beans to the skillet and cook for an additional 10 minutes.

6. Add Spinach
Thoroughly wash the spinach and remove the stems. Stir the spinach into the skillet and cook for a few more minutes until wilted.

7. Serve

Remove from heat and serve immediately. Enjoy this high-protein, nutrient-rich salad warm.
