Blueberry and Walnut Muffins

Blueberry and walnut muffins are my favourite muffins. Here is a good recipe which includes spelt flour and oatmeal, and I find this a good combination for those with high cholesterol levels and it is tastier than the plain oatmeal muffins I used to recommend for those with high LDL (bad) cholesterol levels.

Blueberry and walnut muffins are my favourite muffins. The blueberries are possibly the best fruit yet in terms of their ability to counter oxidative stress in the body, which means they help fight premature ageing. Walnuts are incredibly healthy as well, and the combination of both blueberry, walnut and oatmeal is fantastic.
Enjoy one of these a day, they taste great!

Makes 22 muffins

Ingredients

  • 2  cups spelt flour
  • 2  cups oatmeal
  • ½  cup sugar
  • 1   tablespoon baking powder
  • 1  teaspoon baking soda
  • 1  teaspoon salt
  • 11  tablespoons butter
  • 1  cup blueberries  (frozen or fresh)
  • 1  cup walnuts (soaked overnight and dehydrated),chopped
  • 1½  cups apple sauce (buy bottled or make your own stewed apple.

Method

  • Preheat  oven to 190 C (375°F).
  • Mix dry ingredients, sift. Use your hands to cut in the butter, by rubbing flour and butter together until very small  rice-like pieces are formed.
  • Fold in blue berries and walnuts, then add the apple puree and mix well.
  • Pour into lightly oiled muffin tins.
  • Bake for 15–20 minutes at 180C
