Hearty Bean Salad Recipe: A Nutritious and Versatile Lunch Option

Ingredients:

– 1 clove fresh garlic, minced
– 2 tsp extra virgin olive oil
– 2 tsp fresh lemon juice
– 300g can of four-bean mix, rinsed, or equivalent cooked beans
– 1 trimmed celery stalk (100g), chopped finely
– 1/2 medium red capsicum (100g), chopped (roasted for added flavor)
– 1/4 cup (30g) black olives, seeded and chopped
– 1/4 cup fresh parsley leaves, loosely packed
– 1/2 small red onion, sliced thinly
– 1 cup baby rocket leaves, loosely packed
– Salt and pepper, to taste

Method:

1. Prepare the Dressing:
– In a small jar, combine the minced garlic, extra virgin olive oil, and fresh lemon juice. Seal the jar and shake well to mix the ingredients thoroughly. This simple, zesty dressing adds a burst of flavor to the salad while providing healthy fats.

2. Assemble the Salad:
– In a medium bowl, place the rinsed four-bean mix, chopped celery, red capsicum, black olives, fresh parsley, and thinly sliced red onion. Add the baby rocket leaves last to keep them crisp and fresh.
– Pour the prepared dressing over the salad ingredients. Toss gently to ensure everything is well-coated with the dressing.

3. Season and Serve:
