Make Your Own Cereal !

Whilst you can buy the boxed and ready-made cereals, you can also make your own. That way you have control of the nuts and seeds you like to eat. Avoid cow’s milk if you wish and try an alternative for a change like almond, oat or rice milk.
The rolled oats are easiest to digest if you soak them in a milk for a couple of hours (or leave them overnight in the fridge to soak). Toasting in a hot oven or dry-frying brings out the flavour of the sunflower and pumpkin seeds. But if you’re in a hurry, as most of us are in the morning, you can just place all the ingredients in a bowl and eat.

Ingredients

  • 4-5 Tbsp whole rolled oats
  • 1  Tbsp sunflower seeds
  • 1-2 Tbsp pumpkin seeds
  • 4-5 Brazil nuts or 6-8 other unsalted nuts of your choice, chop roughly
  • ½ dessertspoon dried fruit if you don’t want to use fresh fruit.
  • Almond, oat  or rice milk
  • Add fresh fruit in season, eg) strawberries, raspberries, chopped mango, peach, pear or apple, gooseberries, blueberries.

 How To Make Nut Milk

Soak almonds, (or rice, hazelnut or sunflower kernels) overnight or for about 12 hours. The simplest way is to change the water, blend the soaked seeds in an electric blender (I use my trusty Vita-Mix, it takes 5 seconds) and press them through a fine strainer. You may either drink the liquid immediately or refrigerate. You may cook the residue of the rice and add the residue of the seeds to any breakfast mix (possibly remove almond skins before blending).
Another way with sunflower seeds (even healthier) is to wait until the sunflower seeds start sprouting. This removes any enzyme inhibitors and provides natural sweetness and natural enzymes to the milk. In this way you can use (the even cheaper) unhulled sunflower or pumpkin seeds for making milk.
