Healthy Nut Mix is what a lot of people are familiar with. Try to stay away from peanuts in commercial “scroggin” or nut & dried fruit blends. It is best to make your own nut mix, that way you will ensure you always get the nuts you like. Avoid roasted, and only buy small amount of nuts. I have found many nuts to be “off” or rancid when I go shopping, and experience will soon tell you what is acceptable and what is clearly not. The mopre fresh nuts you eat, the more fussy you will become! I prefer almonds, Brazil nuts, walnuts, hazelnuts, and a small amount of pumpkin and sunflower seeds, these are your best choices. This easy to prepare nut mix is a great energy snack when on the run or for school lunches. I carry a small amount in my briefcase on my travels, along with my trusty stainless steel water container.
- 2 cup almonds
- 1/2 cup walnuts or pecan nuts
- 1/2 cup currants
- A few cashews (buy organic)
- 1/2 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1 cup unsulphured dried apricots. (make sure they are naturally dried, if you read sulphur dried on the pack put them back)
Cut apricots in half and combine all ingredients. Store in a airtight container, a stainless steel container is best.
