I just love Chai tea, especially the original Indian chai the way the Indians make it! If you want an authentic Indian chai tea then try this recipe, and whilst it may not be exactly the same it is very close to the real thing I assure you.
You can make it with full cream (real) cow’s milk which is unpasteurised and unhomogenised and if you do, you will have the real thing, but I prefer either coconut or almond milk. It tastes OK using rice milk as well and it is important to experiment.
- 3 teabags black tea
- 4 cups water
- A 3 inch cinnamon stick
- A 1 inch piece of ginger root cut into 4 slices
- 1/2 tsp (2 ml) cardamom seeds
- 1/2 tsp (2 ml) black peppercorns
- 1/2 tsp (2 ml) whole cloves
- 1 tsp (5 ml) whole coriander seeds
- 1 cup (225 ml) coconut or almond milk
- Manuka honey or stevia to taste
Bring water to boil in a saucepan. Add spices, cover, and simmer on very low (lid on) for 20 minutes. Add teabags and steep 10 minutes. Add milk and heat to drinking temperature-do not boil. Strain mixture through a cheesecloth or cotton dish towel. Serve with honey or stevia to taste. An interesting experiment I tried was to use two Dilmah (extra strength) tea bags and one Healtheries Chai tea bag and it was great.
