If you’ve got kids with food allergies or wish for your family to go gluten-free, you can still enjoy these classic biscuits by using this recipe, and by using the recommended ingredients such as rice bran, oats, and making double sure you use a gluten-free flour, you will be making and serving up these mouth watering gluten free cookies in no time.

Ingredients:

  •     1 cup butter
  •     1 cup brown sugar
  •     3 egg whites
  •     1 tsp pure vanilla (not artificial)
  •     1 cup gluten-free flour
  •     3/4 cup rice bran
  •     1 tsp baking soda
  •     1 tsp salt
  •     2 cups quick cooking oats
  •     1 cup chopped pecan nuts
  •     1 package chocolate chips

Method:

  • Beat the butter and sugar together until creamy.
  • Beat in egg white and the pure vanilla.
  • In separate bowl sift flour, rice bran, soda and salt. Add to creamed mixture. Beat well.
  • By hand stir in oats, nuts and the chocolate chips.
  • Drop by rounded teaspoonful onto greased baking sheets.
  • Bake at 350 degrees F. for 8 to 10 minutes. Remove. Cool. Makes 36 cookies.
  • This cookie recipe is gluten-free and wheat-free.
